For my second project out of the Italian Cheese Kit I decided to make the mozzarella. It's more adventurous with the inclusion of rennet (vegetarian rennet tablets come with the kit) and with the added step of stretching and balling up the cheese. A little more stressful too.
I tried to take progress pictures but they were basically a variation on white goop in yellowish liquid so do forgive me if I keep them on the hard drive. Instead have a picture of the delicious finished project sitting happily on a pizza with some green olives and goats cheese.
