This is my second drive by muffin post for Vegan MoFo.
This is a Zucchini Spelt Muffin from one of my all time favourites; Vegan Brunch. Admittedly it looks a little plain but the taste is a lot of awesome. They went in to work with Stephen and I had to fight have this one just to myself.
