Health food bunnies of the apocalypse

Stephen and I attacked the kitchen again last night. It was good. It was very good. Despite Stephen complaining that the mixture of soymilk and oil looked yuck, and his Dad complaining that the mixture of soymilk and oil looked yuck, and his Mum complaining that the mixture of soymilk and oil looked yuck the end result was very, very yummy.

The recipe was the Chocolate-Chocolate Chip-Walnut cookies from Veganomicon As usual we used chopped chocolate rather than chips and, as usual, Stephen refused any form of nut.

Our Chocolate-Chocolate Chip-Walnut cookies are amazing. We ate one before bed last night, one for breakfast and the race is on to see who can eat the most today. The cookie is slightly cakey, incredibly rich, and beautifully sweet. According to Stephen it is the perfect cookie.

Feeling guilty with the calorie count though I’ve prepared him a little after work snack. My copy of The Manga Cookbook came today. Bought on recommendation from Vegan Lunch Box and review on the way. The first recipe is Usagi Ringo (rabbit apple) so I cut up some bunnies ready for Stephen. I dipped them in diluted salt water to avoid browning but I fear they may taste too like salt. Stephen won’t eat them if I put them in orange juice though. I will, and have, they are delicious.
