Sparkled Ginger Cookies

Every so often I trawl through my old cook books to see what I've missed. With Vegan with a Vengeance it's more often than not the sweet things I miss. So I thought I'd give the Sparkled Ginger Cookies a whirl. Aren't I glad I did? They got rave reviews. I was told that they were even better than Tesco's Finest. Which is saying something. They look and taste delicious. Perfect warming comfort cookie for how wet and windy the West Coast has been this week.
