To celebrate the Autumnal equinox (the first day of Autumn) I’ve made almond fudge muffins, which my workmates will be enjoying in a couple of hour’s time.
The fudge was my standard recipe (300g sugar, 300g milk, 75g butter) with half a teaspoon of almond extract stirred in as it cooled. Once set I crushed it with a rolling pin and stirred it into the muffin mix, which I based on the marzipan muffin recipe from 1 Mix, 50 Muffins.
