As I was off crepe making I found the Vegan Brunch recipe for coffee cake. Not that I'd lost it. It's just that I'd forgotten about the amazing versatility and, of course, the outright yummyiosity.
So I find this recipe right at the start of berry season when even the supermarkets are going mad for local produce and we're right in the middle of Stephen's blueberry experiments a light bulb (energy saving, naturally!) turned on.
Blueberry Coffee Cake!
The lovely juicy not too tart blueberries in the cake base and the delicately spiced crumb top make for a fantastic cake.
